Jackie says “ripe mangoes puree to a wonderfully smooth consistency and when mixed with the other ingredients this really does have the appearance and texture of custard, with a surprisingly creamy and fruity taste”. Serves: 4 ingredientsFor the fruit salad For the mango custard method1. Chop up the fruit into bite size pieces and arrange in a bowl. 2. For the 'custard' dice the mango and put into a blender, add the lime juice, yogurts and the sieved juice from the passion fruit. Blend until smooth. Serve separately in a jug.
